An incredibly easy sheet pan dinner that is perfect for a busy weeknight. These sheet pan soy curl fajitas have a lot of flavour and can be topped however your family likes.
A note on some of the ingredients
Soy curls: Soy curls are dehydrated soy that have a texture that is very similar to chicken. They are completely neutral in flavour which makes them very versatile. Soy curls can be tricky to find in grocery stores but when I do find them I stock up! Rehydrate them with hot broth, then squeeze out the excess liquid and season.
Vegetable broth: When cooking with soy curls I usually rehydrate them with broth made with a bouillon cube. McCormick offers gluten-free, vegan bouillon in beef or chicken flavors that works very well with the soy curls. I also sometimes use Better than Bouillon in boiled water to rehydrate as I usually have some on hand.
How the sheet pan soy curl fajitas are made
Preheat the oven to 400°F and line a large rimmed baking sheet with parchment paper. Boil the kettle if using bouillon to rehydrate the soy curls.
In a large heat proof bowl measure out 4 ounces, or half the package, of soy curls. Add in the heated bouillon and let the soy curls sit for 5 to 10 minutes to rehydrate them.

Meanwhile in a small dish measure out all of the spices.

Chop the peppers and red onion.

Once the soy curls have rehydrated squeeze the excess liquid out. I do this by putting them in a colander in the sink and pressing down with the back of a bowl. Then add the soy curls, peppers, onion and oil to a large bowl and toss. Once everything is covered in the oil add in the spices and toss again until everything is well coated.

Spread the soy curls and pepper mixture on to the prepared sheet pan and roast in the oven for 25 to 30 minutes, tossing half way. Watch the soy curls and peppers toward the end as they can start to burn. You want a few crispy bits for texture but nothing burnt to a crisp!

Once they come out of the oven squeeze half a lime over everything and toss.
Serve the sheet pan soy curl fajitas on warmed gluten free tortillas. Some toppings that can be used are salsa, jalapeños, cilantro, guacamole and cashew sour cream.
