Gluten free, fluffy waffles

These gluten free fluffy waffles are crispy on the outside, fluffy on the inside and not too sweet so that they pair perfectly with fresh fruit, maple syrup, whipped cream or whatever topping your heart desires!

My kids LOVE waffles. Prior to being diagnosed with celiac disease my son would eat a certain gluten and non vegan frozen brand every morning for breakfast. We have tried some gluten free frozen waffles but the texture is not exactly appetizing. So after Christmas I bought a mini waffle maker on sale and started to play around with a waffle recipe. The kids were happy to be my taste testers!

There are a couple of tricks to making waffles. The first is to use a regular spray bottle with a neutral oil in it to grease the waffle maker. If you use the oil in a spray can it adds a stickiness to the waffle maker that is incredibly hard to get clean.

The second trick is to use club soda! The club soda reacts perfectly to the baking powder to help make the waffles light and fluffy. I buy mini cans which are great because one can is equal to one cup, exactly the amount needed.

Before you start assembling the ingredients, turn on the waffle maker to get it nice and hot. Then mix together the dry ingredients in a large bowl and the wet ingredients in a small bowl. Don’t over mix the wet ingredients though, we want to keep some of the carbonation.

Mix the wet ingredients into the dry, just until there are no dry patches left. The batter should have the consistency of pudding and not be too thin and runny or too thick. Then spray your waffle maker with the oil and cook the waffles as per the manufacturers directions. I definitely need to buy a bigger waffle maker!

These waffles keep in the fridge for a day or two or you can freeze them for up to 3 months. We reheat them in the toaster for a quick breakfast treat. I highly recommend serving them with my crispy tofu bacon!

Ingredients

  • 2 cups gluten free all purpose flour (I use Bob’s Red Mill 1:1 flour)

  • 1/4 cup granulated sugar

  • 1 tbsp baking powder

  • 1/2 tsp salt

  • 1 cup club soda

  • 1/3 cup neutral oil

  • 2 tsp vanilla extract

Directions

  • Preheat your waffle maker.
  • In a large bowl add the flour, sugar, baking powder and salt. Mix together.a stainless steel bowl with flour, baking powder and salt
  • Add the oil, vanilla and club soda to the dry ingredients and gently mix until there are no dry patches left in the batter. The batter should be the consistency of pudding, not too thick and not too thin.a stainless steel bowl with waffle batter
  • Follow the instructions of your waffle maker to cook the waffles.

Notes

  • Nutritional information is a rough estimate and worked out per waffle.
  • It matters how the flour is measured. Start with 1 1/2 cups of flour and if the batter is too runny add in more flour, 1 tbsp at a time up to 4 tbsp. The batter should be the consistency of pudding.
  • I recommend putting neutral oil in a spray bottle and using that to oil your waffle maker instead of using the spray oils that are bought from the grocery store.
