Small air fryer potatoes that are crispy on the outside, soft and fluffy on the inside and full of flavor!
These potatoes are so easy to make and only take 20 minutes in the air fryer. Don’t have an air fryer? You can make them in the oven as well! Seasoned with only a few ingredients, yet packed with tons of flavor. We love them on the side of Grandma’s Meatballs or some baked tofu. They would also be great for a savory breakfast instead of hashbrowns with tofu bacon.
I like to mix my seasonings together first and then cut the mini potatoes in half.
After the potatoes have been cut, add some olive oil, toss and add the seasonings tossing again to ensure all of the potatoes are coated. Add them to the air fryer, shake half way through cooking and viola, they are ready to enjoy!
Don’t have an air fryer? No problem, these potatoes can also be made in the oven! Bake them for 30 minutes at 400°F, tossing half way through.
A note on some of the ingredients
Mini potatoes: For convenience sake I purchase mini potatoes that come in a 1.5 lb bag. Regular Yukon potatoes could also be used, just chop them into 2 cm pieces.
Nutritional yeast: Nutritional yeast is a deactivated brewer’s yeast that is high in protein and often fortified with vitamin B12. It has a slightly cheesy, umami flavor. Unfortunately there is no good alternative to this ingredient.
Extra virgin olive oil: This is the oil that I usually have on hand. Any neutral flavored oil can substitute it.
