The past two summers my mom and I have taken the kids blueberry picking. The kids always enjoy it and last summer we found it hard to stop picking blueberries! You think that you’re done, you can’t put anymore into your basket but you keep finding nice big fat ones that are almost falling off the blueberry bush. We ended up with so many blueberries that I was looking for a way to use them up. I had planned to freeze most of them but when I started making this smoothie I went through all of the fresh blueberries quickly! I did manage to wash and freeze some of the blueberries so that I could enjoy this smoothie for a few weeks, until I had to buy grocery store blueberries.

This smoothie is great with fresh blueberries but if you are using frozen then I recommend running the blueberries under some warm water for 30 seconds, otherwise the smoothie becomes slushy.

Ingredients

  • 1 cup blueberries

  • 1/2 frozen banana

  • 1 tbsp peanut butter

  • 1 cup unsweetened almond milk (or a non dairy milk of your choice)

Directions

  • If using frozen blueberries, run them under water for 30 seconds.
  • Add all ingredients to a high speed blender and blend until smooth.

Notes

  • To make this recipe nut free I recommend using sun butter instead of peanut butter and soy milk instead of almond milk.
