This peanut butter cup smoothie tastes like a dessert! The dates add sweetness while the frozen banana helps to make it creamy. My kids love this smoothie after school as a treat. Sometimes eating gluten free can mean that you don’t get as much fiber as you should, the dates in this smoothie helps with that.

I have been making a variation of this smoothie for years, usually with more banana, less peanut butter and no dates. Sometimes I would even throw in spinach which you couldn’t taste at all but would make the smoothie the colour of swamp water, not appetizing. I have adjusted it to include more fiber and as my kids start to enjoy peanut butter more I added more in as well.

I find that even if my dates are fresh, it is best to let them soak in some boiled water for 30 minutes or so before adding them to the blender. I will also blend this smoothie twice to make sure that all of the dates have been blended. There’s nothing more frustrating than having a piece of date stuck in your straw. By soaking the dates and then blending twice, this smoothie is nice and smooth.

Ingredients

  • 2 medjool dates, pitted and soaked

  • 1/2 frozen banana

  • 1 cup unsweetened almond milk

  • 1 tbsp unsweetened cocoa powder

  • 2 tbsp natural peanut butter

Directions

  • Roughly chop and soak the dates in hot water for 30 minutes, then drain.
  • Put all of the ingredients into a high speed blender and blend until smooth.

Notes

  • I recommend blending the smoothie twice to ensure the dates have been blended.
