Hi! I’m Jessica and I am a mom of two and am constantly in search of a meal that everyone in my family will be excited about when they come to the dinner table.
My husband and I went vegan in 2012 after watching Forks over Knives. I never thought that I would give up meat but looking back I never really liked most of it and never liked eggs. When we first went vegan it took me awhile before I was comfortable cooking with tofu and actually enjoying it but now it is easily one of our favourite foods.
When our kids were born we decided to have them eat vegetarian for a variety of reasons. Our youngest ended up having an egg intolerance so we then only had them eating some dairy. In 2023 both kids were diagnosed with celiac disease. We were shocked especially as one kid didn’t have any symptoms. And of course pasta is a staple in our kids diet! When I started researching gluten free meals online and in cookbooks at the library the majority of the recipes were for meat or included eggs and the vegan gluten free recipes were nothing that our kids would touch with a ten foot pole. So I started coming up with vegan, gluten free comfort food, food that I would have had growing up but without the animals and gluten. It was definitely a challenge at the beginning and it has been an adjustment for all of us as we are now a mostly vegan, completely gluten free house but the food is delicious! I want to change the idea of vegan, gluten free food. It can be comfort food, delicious food, food that is full of flavour, food like Shepherd’s Pie, Tofu bacon, Nachos and Muffins. Food that your kids will request again and again and get excited to see at the dinner table.
